Our white tuna is flown in fresh daily. I slice it thin and serve it with an aromatic meyer lemon infused oil and top it with sweet blood oranges and a slightly salty green olive tapenade. It balances the buttery, fatty aspect of this delicate fish with a citrus and earthy presence.

We take a nice brut sparkling from Napa Valley which boasts of a slight toastiness and an essence of ripe pears and infuse it with elderflower, adding a delicate white flower backdrop to this effervescent cocktail.
